Ecuador
Ecuador is a republic, located in South America. The adjacent countries are Peru and Colombia. The capital of Ecuador is Quito and Guayaquil is the name of its main port. The famous Galapagos Islands fall in the Ecuador region. In 1984 the Galapagos (Archipielago de Colon) became a Man and Biosphere Reserve. The Galapagos Islands, one thousand kilometers off the coast of Ecuador, have been called a "living museum and showcase of evolution".
Ecuador has undergone many battles and bloody wars before it returned to a civilian government in 1979. Prior to this, it had military rule when former president Jose Maria Velasco, ruled the country with dictatorial power. Valesco was overpowered by General Guillermo Rodriguez Lara in 1972.
The first half of the 20th century saw Ecuador losing many territories to neighboring countries. Colombia, Ecuador, Panama and Venezuela during 1819 had formed the Republic of Gran Colombia. In 1830 Ecuador left Gran Colombia and became an independent country.

While Spanish is the official language, some Amerindian languages, particularly Quechua, are spoken. Most people are Roman Catholics. There is not much difference in the food habits of its people, from other South American countries. Potatoes, tomatoes and various beans are native to Ecuador and so are they in the rest of South America. Yucca (cassava) and squash are also grown. Maize, has been a staple food for centuries and is eaten in a number o styles. Rice is served frequently with meat dishes and vegetables. Fish is an essential part of Ecuadorian cuisine. Ceviche, fish or shellfish marinated in lemon or lime juice, is eaten with popcorn, sweet potato chips, corn nuts and hot sauce called aji.
