North Korea

The Democratic People's Republic of Korea (North Korea) is situated in Eastern Asia on the Korean peninsula. The volcanic island of Cheju is Korea's largest island.

The terrain of this country is mainly hilly and mountainous. Mountains cover around two-thirds of the country. It is cold in winter and hot in summer. Rainfall tends to be high during the month of July.

The War lasted three years, with a ceasefire in July 1953.

After the Korean War (1950-53), Korea was left with a devastated economy. From this beginning, Korea has achieved an economic miracle. Though it went thrugh an economic boom between the ‘60s and ‘80s, in 1997 Korea suffered an economic set-back and needed financial assistance from the International Monetary Fund. By the beginning of the millennium Korea's economy was back on track. The main industries include steel, shipbuilding, automobile production, electronics, chemicals and telecommunications. A small percentage of population works in the agricultural sector. Products are rice, barley, root crops, vegetables, ginseng and fruit.

There are many methods of cooking in Korea - steamed, stir-fried, grilled or barbecued. Fish is often eaten raw. Seasonings like soy sauce, soybean paste (doenjang) and red pepper paste (gochujang) are frequently used. Fermented foods, such as kimchi, a fermented vegetable dish, are popular. Dessert recipes use rice flour, honey and nuts. Fruits including cherries, strawberries, peaches and watermelons are available.
