Israel

The State of Israel is a Middle Eastern country. It is bordered by Egypt, the Gaza Strip, Lebanon, Syria, the West Bank and Jordan. The Mediterranean Sea is along its coast. Jerusalem is Israel's most important city although most countries have embassies in Tel Aviv-Yafo. Other cities include Haifa and Beer-Sheva. Haifa is Israel's main port. Most of the land area of Israel is covered with desert. The River Jordan is Israel's main river.

Following the Second world, when millions of Jews were killed in the holocaust, there was a strong demand for a Jewish land and on 14 May 1948 Israel became a Jewish state. The entire region remained prone of wars and a number of wars took place in the following decades - the Suez-Sinai War (1956), the Six Day War (1967), the War of Attrition (1967-71) and the Yom Kippur War (1973). The State of Israel is a technologically advanced country with a good market economy. With very few natural resources, it needs to import oil, raw materials and grain. Despite the scarcity of arable land and fresh water resources, the country is mainly self-sufficient in food production. Agricultural products include cereals, vegetables and citrus fruits; dairy products and eggs are important exports and wine is produced. Industries include machinery, construction, cement, chemicals, rubber, plastics, electronics, diamond cutting, textiles, clothing and food processing. Skills learnt from Russian Jews who came to Israel after the break up of Russia have made the country a world leader in computer software and communications. Tourism industry has suffered massive set backs due to constant threats of terrorism in the terrain. The USA is a major investor in Israel. Israel has free trade agreements with USA and Canada and is an Affiliate Member of the EU.

While Hebrew is the official language, Arabic is spoken by the Arabs. English is taught in schools. Majority of people are Jewish but there is a significant population of Muslims in the country along with a Christian minority.

Israeli cuisine has flavors of many countries. The Jewish religion and the Islamic religion forbid the consumption of pork. Both religions have holy days which restrict the kind of food that is consumed. For example, Jews are not allowed to cook on the Sabbath and Muslims fast for thirty days during Ramadan eating special food at the end of the day. Apple cake, chocolate cake, honey cake and baklava are just a few of the delicious varieties of cake from the Israeli kitchen. Kosher wine is produced for the Jewish population by the Israeli vineyards. Muslims do not drink alcohol.
