Azerbaijan
The Republic of Azerbaijan is located in South Western Asia. The country is bordered by Iran, Armenia, Georgia, Russia and the Caspian Sea. Baku is the capital city. Nearly half of the country is mountainous with some lowlands and a coastal area along the Caspian Sea.
Throughout the ages, Azerbaijan has been ruled by many different empires. These include Persians, the armies of Alexander, Romans, Arabs, Mongols and Turks.
The country achieved independence after the dissolution of the USSR in 1991. Ever since independence the country had faced economic instability. Since the 1990s, steps have been taken to revamp the economy. Now Azerbaijan has reopened its oil industry to western companies, high tech equipment is facilitating access to Azerbaijan's deep-water oil fields in the Caspian Sea. Industries other than petroleum and natural gas include steel, iron ore, cement, chemicals, textiles and carpets. Agriculture and forestry are the second largest employers after the service sectors. Agricultural products are cotton, tobacco, tea, grain, rice, vegetables, nuts, apples, cherries, grapes, olives, lemons, strawberries, peaches and pomegranates.
While Azerbaijani (Azeri) is the main language, some people speak Russian and Armenian. Most of the people are Muslims.
Traditional Azerbaijan cuisine includes bread, pancakes and thick soups. Pilaff is a favorite in Azerbaijan. Spiced poultry, lamb, mutton and beef are consumed with relish in this country. Kebabs or pressed minced meat, grilled on skewers are popular. Vegetables, such as aubergines and tomatoes are often pickled. Dairy products like yoghurt and "kurut", a dried type of cottage cheese, are used in recipes. Sherbet drinks are very popular; mineral waters are available and sweet black tea is a favorite drink.
